123 Certified Organic Blanco 375ml is an unaged tequila made from the estate-grown agave of 123 Organic Tequila, an artisan producer based in Jalisco, Mexico. The agaves are left to ripen for up to ten years, then cooked in traditional stone ovens for two days to concentrate their flavor. The tequila is then double distilled in small batches, resulting in a tequila with a clean, pure agave flavor. It has aromas of lemon peel, fresh agave, black pepper, and minerals, and a silky smooth finish with a slightly sweet kick. Tasting notes include:
- Aroma: cooked agave, cracked pepper, ripe fruits
- Palate: green and cooked agave, lemon, black pepper, spice
- Finish: Lasting oiliness with dry spikes of spice
